It's easy enough that anyone can do it, and my French husband loves this classic treat during the festive season.     This layered cake serves 10-12 people. You will have a few steps, making the cake, the cream, and the dipping syrup. The main ingredients are chocolate shavings, cocoa powder, cherry syrup, and maraschino cherries (homemade cherry filling). Some people also use cherry liqueur. But you don’t need it for this recipe.

    Ingredients

    • 8 large eggs
    • 1 cup of sugar
    • 1/2 Cup almonds (ground)
    • 1/4 Cup flour
    • 1/3 Cup cocoa powder

    Whip cream

    • 4 Cups of heavy cream
    • 3 Cups of sugar
    • ¼ teaspoon of cream of tartar

    Dipping syrup:

    • 1/3 Cup + 1.5 tablespoons of Kirsch (optional)
    • 1/3 Cup + 1.5 tablespoons of cherry juice
    • 1 can of cherries in thick syrup (used for the cherries and cherry juice)

    How to make the Cake

    1. Preheat oven to 360 degrees
    2. In a large bowl mix: 8 egg yolks, 1 cup of sugar, 1/2 cup of almonds, 1/4 cup of flour, and 1/3 cup of cocoa powder.
    3. beat 8 egg whites until they form a thick foam.
    4. incorporate the egg whites into the mix from the bowl.
    5. split the batter between the two pans.
    6. cook for 40 minutes at 360 degrees.

    Cream for the filling for cake

    • 1 – beat heavy cream for 3 minutes.
    • 2 – add 3 Cups of sugar.
    • 3 – add cream of tartar and beat for another 2 minutes or until stiff peaks form.

    Dipping Syrup

    Mix 1/3 Cup +1.5 of Kirsch (optional) and 1/3 Cup +1.5 tablespoons of cherry syrup.

    Building the cake

    1 – cut each cake into 2 equal discs.

    2 – dip each disc in ¼ of the dipping syrup.

    3 – spread 1/5 of the whipped cream over the disc.

    4 – drop/spread cherries evenly on the whipped cream. (some people use fresh cherries).

    5 – repeat until the 4th disc.

    6 – spread the rest of the whipped cream over the 4th disc and over the sides of the cake.

    7 – sprinkle the chocolate shavings evenly around the cake. Time to decorate! I added whipped cream to a ziplock bag and cut the tip to make little drops of cream. Then I added a cherry. I also added these edible stars.
