And what better way to take advantage of this than by making yourself a delectable cold salad; that's why I've come up with the Florida Three Pepper Salad recipe! Beyond its fantastic flavor profile, there are many nutritional benefits to consuming bell peppers - including Vitamin C and antioxidants - which make it an integral part of any healthy diet.

    Peppers are an excellent source of Vitamin C, making them a beneficial addition to any diet.

    Red peppers are a superfood, packed with over 200% of your daily recommended vitamin C intake. Not only will it keep your skin looking youthful and glowing, but the rich source of Vitamin B6 and folate also helps promote efficient absorption of iron in the body. What's more? It tastes delicious!

There's no denying that the freshness of locally sourced produce creates an entirely different flavor than store-bought items! It’s essential that I use only top-notch ingredients in every meal; not just for myself, but also for my loved ones.

    The kind soul from Farms of Florida highlighted these delightful peaches - I promptly bought four and they were quickly consumed! Not only is the food at this farm nutritious, but it also makes a real statement with vibrant colors that can liven up any main dish. Amongst them, the Florida Three-Pepper Salad stands out in its presentation and taste; it's great even when chilled for several days afterward!

    This dish is great for any occasion - dinner, lunch or a July Fourth Barbecue! No matter how you enjoy it, you won't go wrong. I personally enjoyed this as my mid-day meal with some crackers; however, to add an extra layer of flavor and texture I like to let the crackers soak in the dressing at the bottom.

    Ingredients For 3 Pepper Salad: Red, Orange, and Yellow Bell Pepper

    • 1 red Florida sweet pepper, cored and seeded
    • 1 yellow Florida sweet pepper, cored and seeded
    • 1 orange Florida sweet pepper, cored and seeded
    • 1 small sweet onion, peeled
    • 1/4 cup fresh Florida parsley or fresh Florida basil leaves, chopped
    • kosher salt and freshly ground black pepper to taste
    • 1 tablespoon rice vinegar
    • 1 tablespoon sesame oil
    • 1/4 cup crumbled feta cheese

    Instructions For 3 Pepper Salad

    1. Core and seed peppers.
    2. Slice sweet peppers into matchstick-size pieces and place in a large bowl.
    3. Slice onion into matchstick-size pieces and add to the bowl.
    4. Add parsley or basil.
    5. Sprinkle with coarse salt and pepper.
    6. Add rice vinegar and sesame oil, stirring to mix well.
    7. Cover and refrigerate for approximately 1 hour before serving.
    8. To serve, toss salad again and sprinkle with crumbled feta cheese

    Salad Dressing for Pepper Salad

    • 1 tablespoon rice vinegar
    • 1 tablespoon sesame oil

    note - sesame oil can be replaced by olive oil and rice vinegar can be replaced by white wine vinegar.

    As you prepare the dressing, remember to use rice vinegar and sesame oil. It's wise to make a bit extra so that it can be kept for future occasions when you may want more! Make sure not to forget to add feta cheese - an essential ingredient in this recipe.
