    Imagine eating salad at every meal. Filled with vitamins, minerals, water, and fiber, fruit and vegetables give us the fuel and energy our bodies need to run at optimal levels. A salad made with fresh ingredients is one of the most delicious things we can eat, and it can be eaten at any time of day.

    These three salads satisfy hunger all day long.

    Breakfast Fruit Salad

    Starting the day with a fresh fruit salad adds nutrition and joy to the morning.

    Salad Ingredients

    • 16 oz. package fresh strawberries, sliced
    • 5 oz. fresh blueberries
    • 2 bananas, sliced
    • 20 oz. can peaches, in their own juice
    • 15 oz. can Mandarin oranges, drained
    • 1 small box of lemon instant pudding (or 1 tablespoon corn starch and 1 tablespoon lemon juice)

    Directions

    Drain the peaches and add the reserved juice to a salad bow. Mix in lemon pudding, or cornstarch and lemon juice, and blend well. This is the dressing. Add peaches, drained Mandarin oranges, strawberry slices, blueberries, and banana slices. Fold without smashing the fruit. Serves 4.

    Tomato, Cucumber, Quinoa, and Feta Luncheon Salad

    This quinoa-based salad is filled with flavor and crunch.

    Salad Ingredients

    • 1/2 pint cherry tomatoes, halved
    • 1 medium cucumber, peeled and cubed
    • 1 cup prepared quinoa, cooled
    • 1/4 cup crumbled feta or vegan cheese
    • 1/4 cup fresh chopped parsley
    • Italian salad dressing
    • Salt & pepper to taste

    Directions

    Add tomatoes, cucumbers, and parsley to quinoa, blend. Add salad dressing and salt & pepper to taste. Mix well and serve. Makes 4 to 6 servings.

    Avocado & Chickpea Dinner Salad

    Chickpeas are a great source of protein that pairs well with other salad ingredients. This avocado and chickpea dinner salad is both delicious and filling.

    Salad Ingredients

    • 1 can garbanzo beans, drained and rinsed
    • 2 small avocados, peeled and cubed
    • 1 medium cucumber, peeled and cubed
    • 1 medium tomato, seeded and cubed
    • 1/2 red onion, thinly sliced
    • 1/4 cup sliced green onions
    • Ranch dressing
    • Salt & pepper to taste

    Directions

    Blend all ingredients with ranch dressing. Serves 6.
