    Yummy Turkey and Black Bean Chili

    Chili is so versatile that you can make it with any color of bean. This recipe uses black beans, but lends itself equally well to red, pinto, or even white beans. It’s easy to make and comes together quickly for a hearty weeknight meal after a long day or a weekend lunch when no one feels like spending a lot of time in the kitchen. It's the perfect dish to have simmering on the stove while greeting Trick-or-Treaters and watching scary movies on Halloween night. This chili can also be cooked over an open fire outdoors.

    Ground turkey keeps it on the light side.

    Ingredients

    • 1-lb. ground turkey
    • 1-15 oz. can black beans
    • 1/2 green bell pepper, chopped
    • 1 chopped jalapeño pepper (remove seeds for less heat)
    • 1 Tablespoon Old Bay seasoning
    • 1 Tablespoon chili powder
    • 1 Tablespoon chopped cilantro, optional
    • Grated sharp cheddar cheese, optional
    • Jalapeño rings, optional
    • Sour cream, optional

    Directions

    1. In a small stockpot or large saucepan, brown ground turkey. Drain fat.
    2. Stir in green bell pepper and jalapeño pepper and cook until slightly wilted, about 3 minutes.
    3. Add Old Bay Seasoning and mix well.
    4. Add in black beans and chili powder and let simmer over medium heat for about 10 to 15 minutes.
    5. Mix in chopped cilantro, if using, and cook for an additional 5 minutes.
    6. Turn the flame off and allow the chili to rest for about 5 to 7 minutes to allow flavors to meld.
    7. Ladle chili into bowls and garnish with grated cheese, jalapeño slices (if desired), and sour cream.

    Enjoy with a side of cornbread, French bread, or breadsticks. Also goes well on hot dogs or as a filling for enchiladas.

    Serves 4.
