    2-Ingredient Banana Ice Cream

    Bananas are my favorite fruit. Although naturally high in sugar, they are also high in fiber and a great source of potassium. A banana is a great snack that’s easy to tote in a lunch box or bag.

    This banana dessert is amazingly good, and so simple to make. For best results, start with frozen banana pieces that have been in the freezer overnight. Once you have tried this recipe, you will want to keep bananas in your freezer always for a quick, satisfying dessert with no added sweetener.

    Ingredients

    • 4 Bananas
    • 1/2 cup heavy cream*

    Directions

    1. Peel bananas and slice them into one-inch pieces.
    2. Place the banana slices into a freezer bag and freeze overnight or for at least four hours.
    3. Once bananas are frozen solid, put them into a blender.
    4. Add the heavy cream.
    5. Blend on high until all banana chunks are broken up, about 30 seconds. (Blending time may be longer or shorter depending on your blender). The finished product should be thick and creamy.
    6. Scoop ice cream out of the blender and freeze it for a few hours, or eat it as it is.

    Makes about four, 1/2 cup servings.

    *This dessert can also be made with only the bananas and no heavy cream. It will still be delicious, just a little less creamy. As an alternative to the heavy cream, try coconut milk, regular milk, or your favorite non-dairy product. You will probably need less of a thinner milk, so test it to get it to a consistency you like.
