    South Louisiana Style Smothered Cabbage

    Cabbage is one of those vegetables that's delicious in both cooked and raw recipes. Used in soups, salads, and side dishes, it takes center stage in entrees such as stuffed cabbage or cabbage rolls

    Smothered cabbage is a favorite in South Louisiana.

    Ingredients

    • 1 medium-sized head cabbage
    • 1 small onion, thinly sliced
    • 2 slices of bacon, chopped
    • 2 Tablespoons butter
    • 1/4 teaspoon sugar
    • 1/4 teaspoon salt
    • 1/8 teaspoon black pepper

    Directions

    1. Remove the outer leaves from the cabbage, and slice thinly.
    2. Put all ingredients in a cast iron, or stainless steel Dutch oven, stir well, and cover.
    3. Simmer over low heat, stirring occasionally and adding water in small increments if the cabbage starts to stick to the pot.
    4. Cook for about 30 minutes, or until tender.
