At this time of year, turkey prices are relatively reasonable, and whole turkeys are sometimes deeply discounted right after a holiday.

This is a great opportunity to stock up on this low-fat protein for easy meals during the colder months. Consider purchasing one, or several, and cutting them into halves or quarters for freezer storage.

For this recipe, a whole turkey was cut in half with the leg quarters reserved for another meal. The turkey is juicy, moist, and tender, and the recipe is very easy. The addition of butter is what keeps it from getting dry while adding tremendous flavor.

You can serve this slow-cooker turkey breast with traditional holiday sides when you don't need or have time to cook a whole turkey. It's great to have on hand for quick lunches or dinners and lends itself to weekly meal prep.

    Ingredients

    • 6 to 7 lb. turkey breast
    • 1/2 medium onion
    • 1/2 green bell pepper
    • 1 stick of butter
    • Seasonings of choice (salt, red pepper, black pepper, rosemary, thyme, garlic powder, etc.)
    • 1/2 cup water

    Directions

    1. Slice onion and bell pepper into thin strips.
    2. Cut 1/2 the butter into six pieces.
    3. Turn the chicken breast skin side down.
    4. Make 4 slits into the breast meat inside the cavity, between the rib bones, without breaking the skin on the other side.
    5. Put butter, a few slices of onion, and a few slices of bell pepper into the slits.
    6. Do the same under the flap of skin at the top of the breast near the neck.
    7. Make a slit on either side and stuff with butter, onion, and bell pepper.
    8. Season the turkey generously with your choice of dried seasonings and herbs.
    9. Put it in the slow cooker and add 1/2 cup water to the pan.
    10. Put the remaining 1/2 stick of butter on top of the turkey breast.
    11. Cover and cook on low for 6 to 8 hours.

    Happy Holidays!
