This simple baked potato soup is perfect for a cold day. It can be dressed up with bacon, cheddar, and green onions/chives, or eaten plain.

Ingredients

• 6 baking potatoes, scrubbed and baked
• 4 Tablespoons of butter or vegetable oil
• 1/3 cup all-purpose flour
• 4 cups milk
• 1 cup sour cream
• Salt and pepper to taste
• Bacon, cheddar cheese, green onions for garnish (optional)

Directions

1. Peel the baked potatoes and cut them into small cubes. If they mash, it's okay.
2. Set the potatoes aside.
3. Heat butter or oil in a stew pot over medium-high heat.
4. Add flour and stir constantly.
5. When the roux has thickened a bit, gradually blend in the milk.
6. Cook over low to medium heat for about 5 minutes, but do not let it boil.
7. Add the potatoes to the milk mixture and blend well.
8. Blend in sour cream and season with salt and pepper. Mix very well.
9. Serve immediately, with or without garnish.
