For a delightful kick, this chicken salad recipe incorporates the olive mix used in muffaletto sandwiches.

Finding something to fix for dinner at the end of a trying week can be a challenge. Use the leftovers from the chicken you baked for dinner or the rotisserie chicken you picked up from the deli earlier in the week.

Ingredients

• 2 cups cooked chicken, chopped or shredded with 2 forks
• 1/4 cup mayonnaise
• 1/4 cup jarred olive mix or gardiniere
• 2 tablespoons finely chopped onion
• 2 tablespoons finely chopped celery
• 1/4 teaspoon celery salt
• 1/4 teaspoon black pepper
• 1 thinly sliced green onion

Directions

1. Blend all ingredients together.
2. Serve on bread, in lettuce cups, or mixed in with cold pasta.
