    Louisiana-Style Red Rice

    Red rice is a traditional Gullah recipe with roots in West Africa. Similar to jambalaya and paella, this recipe uses left-over cooked rice and is seasoned with Cajun or Creole seasoning.

    Ingredients

    • 1 Tablespoon oil
    • 1 small onion, thinly sliced
    • 1/2 green bell pepper, thinly sliced
    • 1 pound smoked sausage, sliced
    • 1 cup chicken broth
    • 14-oz. can diced tomatoes
    • 2 cups cooked rice
    • 1 teaspoon Cajun or Creole seasoning

    Directions

    1. Put oil in a skillet and heat over medium heat.
    2. Add sliced onions and stir fry for about 2 minutes.
    3. Add sausage and brown.
    4. Add green pepper, stir, and continue to fry for 1 or 2 minutes.
    5. Stir in chicken broth and diced tomatoes and bring to a boil.
    6. Lower heat and stir in rice.
    7. Add in Cajun or Creole seasoning and stir well.
    8. Cover and remove from heat.

    Let sit for about 5 minutes before serving.

    my Aunt Mildred used to make this for me whenever I went to New York City for the holidays. it was sooo delicious. I tried to make it, but it never tasted like her red rice!
