    Weekend Brunch at Home: Cajun Eggs Benedict

    Whether you have guests visiting for the weekend or you just want to treat yourself, a nice brunch at home is a great idea. Serve Cajun Eggs Benedict with Mimosas, Bloody Marys, or hot coffee.

    Ingredients

    • 4 eggs
    • 2 links smoked sausage (cut in half and butterflied to make 4 flattened pieces)
    • 2 biscuits
    • 1/2 cup Hollandaise sauce*
    • salt
    • cayenne pepper and finely chopped parsley, for garnish

    Directions

    1. Pan-fry sausage and set aside.
    2. Poach eggs in hot water until whites are cooked through. (About 3-4 minutes).
    3. Slice biscuits in half and toast in a toaster oven or oven.

    Assemble

    1. On a plate, place one sausage half, cut side down, on top of each biscuit half. (2 biscuit halves per serving).
    2. Top with a poached egg. Season with salt.
    3. Spoon Hollandaise sauce over each egg.
    4. Top with chopped parsley and a sprinkle of cayenne.

    Serves 2.

    *You can make your own Hollandaise sauce, but Knorr brand sells one in dry form that comes in a packet. You just mix it with milk and butter, and bring it to a boil on the stove. It works well when you don't have the time, or the inclination, to make your own.
