    Eggs are so versatile. Whether you like them fried, scrambled, boiled, or poached, they can be dressed up with virtually any savory ingredients for a quick meal suitable for breakfast, brunch, lunch, dinner, or a snack.

    This recipe requires only three ingredients for a brunch item with a kick. The name was borrowed from a very old recipe book.

    Ingredients

    • 1/2 cup salsa
    • 2 eggs
    • Parmesan or other cheese

    Directions

    1. Add salsa to a small frying pan.
    2. Heat to a simmer.
    3. Break eggs into salsa.
    4. Cook until egg whites begin to harden.
    5. Remove heat and cover the pan.
    6. Let sit for up to 5 minutes.
    7. Sprinkle with Parmesan or other cheese.

    Makes one serving. Serve with toast.
