    Mexican Goulash: Spicy, Cheesy, and Delicious!

    Nana's Mexican Goulash

    Ingredients:

    2 lbs of lean ground beef browned and drained

    1 medium size yellow onion diced

    1 can whole kernal corn drained

    1 15 oz can diced tomatoes

    Diced jalapeno peppers, I use 3 or 4, but you can change this depending on how spicy you like things

    1 package of elbow magaroni, cooked and drained.

    1 large can of tomato sauce

    Velveeta cheese

    Brown ground beef and drain off excess fat. Pour into a large foil pan. Add the diced onion and jalapeno peppers, diced tomatoes and tomato sauce. Mix well and salt and pepper to taste, garlic powder and onion powder and chili powder (as much or as little as you like). Cube the velveeta cheese and add to mixture.

    For a little extra kick, I add a jar of my homemade salsa.

    Cover with foil and place into a 350 degree oven for about 35 to 40 minutes until everything is good and hot and the cheese is melted through.
