    Air Fryer Pork Chops with Pork Rind Crust

    As a diabetic I sometimes experiment with different ways to cook things to make them more diabetic friendly. My grandmother used to cook fried chicken rolled in corn flakes. I knew I couldn't do that, however pork rinds don't have carbs. So I crushed a bag of pork rinds.

    What you will need:

    1 large bag of pork rinds, crushed.

    4 or 5 pork chops. I used the boneless ones.

    salt and pepper to your liking (or any other seasonings of your choice)

    Olive Oil cooking spray.

    Rinse the pork chops and pat dry. Spray with olive oil cooking spray. Season with salt and pepper and then coat with the crushed pork rinds. Place into air fryer on 370 for 35 minutes. This dish came out so good. Moist on the inside and crunchy on the outside.
