    Spaghetti Squash with Meatballs

    A low carb, keto friendly dinner sure to please.

    1 spaghetti squash, baked and scooped out of the shell

    1 lb ground beef

    1 lb of italian sausage

    1 cup grated parmasean cheese

    1 cup grated mozzerella cheese

    1 cup of italian breadcrumbs

    Cut the spaghetti squash legnth wise and remove the seeds. Spray with olive oil cooking spray and place on baking sheet cut side down. Bake at 375 for approximately 35 to 40 minutes (until tender), Remove from oven and let cool slightly and rake the filling out of the shell with a fork.

    Combine ground beef with italian sausage and bread crumbs and mix well. Form 2 inch meatballs and place into oven and bake at 375 until cooked through. Remove from oven and plate with the spaghetti squash. Top with your choice of sauces, (I used tomatoe sauce with some italian seasonings) and top with both cheeses.
