Gray Fox Coffee has opened a new location at The Dayton’s Project in downtown Minneapolis.

The skyway-level location in the building at 700 Nicollet Mall had been vacant for six years, according to Transwestern Real Estate Services, which oversees leasing in the building. The new location features coffee, breakfast items, and smoothies, as well as “Dayton’s-exclusive menu items,” such a gingerbread-flavored specialty coffee, Transwestern said in a press release.

A public launch is scheduled for July 18 with a ribbon-cutting ceremony at 10:15 a.m.

“Gray Fox Coffee is thrilled to open our new location at The Dayton’s Project and provide a new amenity to the tenants of the building and surrounding community,” Chris Bjorling, owner of Gray Fox Coffee, said in the release. “We pride ourselves on our specialty and unique menu items that offer a modern twist on nostalgic favorites. We could not think of a more perfect place to open our fourth location than a building that is both modern and historic.”

Owned by 601W Companies, The Dayton’s Project is a 1.2 million-square-foot, Class A landmark property. The building, formerly a Dayton’s department store, features a gym, private lounges, and a rooftop terrace.
