Lance Westby, owner and head chef of Backwater BBQ, left his job at a Winona industrial company to open his restaurant in the Winona Mall in 2022. The menu at Backwater BBQ is a blend of Kansas City, Texas, and Memphis BBQ styles, with a touch of Cajun. This makes it the only BBQ restaurant in Winona and unique within a 30-mile radius.

Popular dishes at Backwater BBQ include Texas Twinkies, Chopped Brisket over Mashed Potatoes and Gravy, and Pork and Brisket Bowls. Westby's personal favorite is the red beans and rice, which includes homemade sausage. He also recommends the brisket and chicken, which are always fresh.

Westby appreciates other local establishments, such as Norvary, Winona Sandwich Company, and Heirloom Seasonal Bistro. If he had to choose a dish from another restaurant, he would choose the Pho at Norvary.

Backwater BBQ is a locally-owned restaurant that serves traditional BBQ and sides. It stands out from chain restaurants due to its homemade touch. As part of the 'Winona Eats' series, Visit Winona is featuring the restaurant as a regional attraction. Westby invites everyone to try the unique flavors and homegrown recipes at Backwater BBQ.
