    Summer Recipe: Grilled Blackened Pork Chop with Peach-Mango Salsa

    MORRISTOWN, NJ -ShopRite’s registered dietitian, Shelbi Thurau, has shared a simple recipe as Memorial Day quickly approaches. Today's recipe Grilled Blackened Pork Chop with Peach-Mango Salsa.

    Ingredients

    • 4 garlic cloves, minced
    • 1/4 cup chopped fresh cilantro, divided
    • 1 1/2 Tbs avocado oil
    • 1 1/2 Tbs Cajun seasoning
    • 4 boneless center-cut pork chops (about 1½ pounds)
    • 3 containers (4 ounces each) peach and mango fruit cups in coconut water
    • 2 Roma tomatoes, chopped
    • 1 red bell pepper, chopped
    • 1/3 cup chopped red onion
    • 1 tsp lime zest

    Directions

    1. Prepare outdoor grill for direct grilling over medium-high heat. In small bowl, stir garlic, 2 tablespoons cilantro, oil, seasoning and ½ teaspoon kosher salt; rub over pork chops and let stand 15 minutes.
    2. In large bowl, toss fruit cups, tomatoes, pepper, onion, lime zest and remaining 2 tablespoons cilantro. Makes about 3½ cups.
    3. Place pork chops on hot grill rack; cover and cook 8 minutes or until grill marks appear and internal temperature reaches 145°, turning once. Serve pork chops topped with salsa.
