    Springbone Kitchen is Opening Soon in the Flatiron District

    Springbone , a casual and healthy QSR concept, is opening a new location in the Flatiron District. Springbone is famous for its bone broths which are made from scratch every day using high-quality bones from free-range animals.

    Springbone uses old fashioned methods cooking bones over a fire for 18 hours to create an all-natural menu of broths. Additionally Springbone offers hearty homestyle bowls.

    The QSR was co-founded by Sam Eckstein and Jordan Feldman eight years ago in Greenwich Village. Soon, they will be opening a new location that brings Springbone very close to a milestone ten locations.

    What Now NY connected with Eckstein for a phone interview.

    “We’ve been in business just 20 blocks away for eight years and already have ton of customers from this neighborhood who place orders,” said Eckstein. “We have amassed a big following in the area so we anticipate a lot of delivery orders being placed at this location. It’s a great spot at the intersection of Union Square, Madison Square, Chelsea, Murray Hill and the East Village. It’s one of the epicenters of the city, and we are really happy to be in this location.”

    Currently Springbone has what Eckstein calls “eight and a half locations”. The half is because of a kiosk that only operates half of each year, so he doesn’t classify it as a full restaurant. This new location on 23rd Street will bring the brand to nine and a half locations in total.

    Eckstein worked with Brooklyn’s Bolt Design Group to conceptualize the space. The final build-out will include custom millwork that maximizes Springbone’s productivity in what is otherwise a small space. There will be three counter seats at the window and three two-seat tables as well. He shared that this location is geared more towards the lunch crowd looking for a fast-casual dining experience.

    Eckstein noted plans for custom banquette seating. The front window of the new Springbone will have reeded glass on the lower half to provide guests sitting at the window-facing bar some privacy from the street.

    Springbone Kitchen on 23rd Street is estimated to open around late June.
