BRIGHTON, N.Y. (WROC) — South Clinton Avenue in Brighton will soon see a major boost, as the ALDI in the Encore at Lac de Ville Plaza is under construction, and looks to open sooner than later.

News 8 has reached out to ALDI for an updated timeframe for opening and hasn’t heard back yet.

Ahead of the opening, the Shoppes at Lac de Ville across the street is seeing some momentum, as one restaurant has just opened, and another cafe is on the way.

Seoul Drop , a Korean cafe and takeout joint is now open. It specializes not only in Korean classics like kimbap, and bibimbap, fusion dsihes like rice bowls.

But Seoul Drop also slings coffees, cafe beverages, and desert items.

They’re open every day of the week except Sundays, and have dine-in, takeout, and catering options.

A note if you go, hey say no tips, as “your visit is enough of a tip.”

Across the way, a new bubble tea place is being developed: Goosepark Bubble Tea. Bubble tea is your choice of tea, flavors, with tapioca bubbles at the bottom.

The property owner of the plaza tells News 8 Goosepark plans to open early next year.

But while you’re checking out these new places, there’s a local success story right around the corner: Project Lean Nation .

While the business sell portioned meals, protein shakes, meal prep options, founder Tim Dougherty says that it what the company does “beyond the meals” that sets them apart.

They offer community-minded and personal accountability plans, meant to keep you on track with your health and fitness goals.

Dougherty opened this Brighton location, their own headquarters, in 2015. Since then, Project Lean Nation has franchised across the country.

The 30th location is opening this weekend near Columbus, and Dougherty says dozens more are in the works!

Although their footprint reaches as far as Dallas, all of their meals are currently made locally, around 400,000 to 500,000 a week.

Dougherty says that despite the company’s volume and reach, anyone will get personalized in-person service, if you go to the Brighton headquarters, and at every location.
