    Fresh seafood for all at the Santa Barbara Harbor and Seafood Festival

    SANTA BARBARA, Calif. - When headed to the Santa Barbara Harbor and Seafood Festival, one must not forget their taste buds for the fresh taste of seafood.

    The festival held on the third Saturday of October, the beginning of lobster season, is a reminder that over a hundred fishermen drop millions of pounds of seafood each year at the Santa Barbara harbor.

    Attendees were able to meet fishermen and eat different types of seafood, all while listening to good music. For one attendee, eating fresh sea urchin is a real treat.

    "It's one of my favorites and this is a delicacy to be able to come here and get it live and fresh," says festival attendee, Lisa Amador. "And just put a little, for me I just put a little lemon on it. And then just scoop it up and eat it."

    We spoke to one local business owner who saw a problem with purple sea urchins in the ocean and came up with a solution…making uni butter.

    "I was like all right these are tasty and they're overabundant into the billions. Two problems, one solution, make a uni butter with them to remove them in mass and make it user friendly to people to eat and cook with," says Max Diamond, founder of Salty Gold Uni.

    "People get the purple urchins, harvest them, fatten them up on a delicious blend of seaweed, almost like a wagyu beef," says Diamond. "You know and then I buy those process them same day and make uni butter"
