    Everyday Kitchen NuLu: New Dining Experience in Louisville

    Everyday Kitchen, a new-to-Louisville restaurant concept in NuLu, serves up modern comfort food -- but with a mission.

    Louisville is a foodie paradise, in that there is fantastic food at every corner. That said, there are few things more exciting than when a new restaurant opens up in the city; it's always fun to see what they will add to our culinary scene! This week I did just that at Everyday Kitchen NuLu, a new-to-Louisville dining concept.

    About Everyday Kitchen NuLu

    Described as “modern comfort food”, Everyday Kitchen finds immense joy in creating “superb food & beverage experiences infused with imagination and layered with delight”. From the moment their chefs curate the finest ingredients to the final presentation of culinary and cocktail artistry at the table, their passion is clear: to serve up source-to-table excellence.

    Each Everyday Kitchen location is helmed by a talented chef who makes the kitchen and the menu their own. Their website explains that they think of each of their chefs as “cousins” — each has their own unique personality and reflect the vibe of their local community.

    Everyday Kitchen takes advantage of the seasons and the best regional ingredients to offer fresh, locally inspired menus every few months.

    The third concept in the United States, the NuLu location of Everyday Kitchen joins Champaign, Illinois + Madison, Wisconsin.

    Executive Chef Mike Wajda

    Mike Wajda is the Senior Executive Chef of Lodgic Everyday Community and heads Everyday Kitchen NuLu. Wajda graduated from the Pennsylvania Culinary Institute in 2007. In Louisville, he worked as Executive Chef at Proof on Main, housed in the 21c Museum Hotel. Wajda grew tremendously as chef de partie at Restaurant Gordon Ramsay at the London Hotel in New York City. After three years working alongside famed Chef Gordon Ramsay, Wajda worked at multiple restaurants up and down the East Coast. One restaurant of note was Craigie on Main in Cambridge, Massachusetts.

    The Menu

    The evening kicked off with a sharable: the Hummus Brulee, which featured charred onion jam, spiced pine nut, and lavash crackers. It was immensely flavorful!

    Next was the Dayboat Fish of the Day, which was a beautiful white, flaky fish finished with watercress pistou, fava beans, fiddleheads, white asparagus, and lemon preserves.

    The Grass-Fed Short Rib was also served at the table, which was atop potato gratin, root vegetables, and finished with red wine.

    Lastly, the dessert was a delicious surprise: a deconstructed Coconut Cream Pie.
