Collard greens, ham hocks and black-eyed peas

A very flavorful dish from the South, I love to prepare collard greens, ham hocks and black-eyed peas to welcome the New Year. This has been one of the thirteen dishes I prepare every New Year's Eve for many years now. Black-eyed peas are supposed to be lucky as well as collard greens. We work hard, but preparing "lucky dishes" is fun and makes you feel positive and optimistic.
