Winter backyard dinner - crawfish & okra
We get mild winters, almost like a Mediterranean type climate, so Sunday lunch was in the backyard garden. Two and a half pounds crawfish or crayfish cooked in roux and seafood broth with okra, celery, andouille sausage cut into medallions and seafood seasoning, then spooned over a bowl of steamed rice. Like crawfish, some people like okra and some don't. Okra is a super food, rich in many nutrients and low in calories. We grew up eating okra, so we like the sliminess which is perfect on gumbo.
