    (CHICAGO) At Shoo Loong Kạn, guests can cook Kobe, A5 wagyu-grade beef, and lobster over heated broth served in pots right at the table. Shoo Loong Kạn is the American name for Xiaolongkan Hot Pot, a Sichuan-style hot pot restaurant that is incredibly popular in other parts of the world.

    According to What Now Chicago, there are over 800 locations of Xiaolongkan in China, Singapore, Canada, New Zealand, and Australia.

    Xiaolongkan Hot Pot began in China in 2014 where the restaurant is known for its authentic communal dining where guests gather around simmering pots of broth and cook raw meats. The first American location opened in LA in 2019. Next came New York in the summer, and another recently opened in Houston.

    Tony Hu, found of the popular Lao Sze Chuan, helped bring Xiaolongkan (renamed Shoo Loong Kạn) to Chicago.

    Hu told Eater Chicago via text, “I love hot pot because it is a great thing to unite friends and family together."

    Shoo Loong Kan in Chicago is housed in a 3,800-square-foot space with gorgeous interiors of bamboo and grey stone.

    Eating over a hot pot is not meant for the single diner. It's best done with a crowd of friends where you can choose several broths and a variety of meats to share. Think of hot pot dining as an Asian take on fondue.

    The main components typically include:

    • Simmering broth (usually pork or vegetable with spicy options)
    • Dipping ingredients (raw meats such as beef, lobster, and shrimp, or rice cakes and vegetables)
    • Sauces for dipping your cooked ingredients
    • Tools for dipping
