    Decadent desserts: Lemon blueberry loaf

    Looking for a quick and easy delicious dessert to make that is good for anytime or any day? Then this recipe for lemon blueberry loaf is just perfect. The best part is that it takes less than one hour to prep and prepare for your whole family to enjoy!

    INGREDIENTS:

    For the blueberry loaf:

    • 1 cup plus 1 tbsp of all-purpose flour
    • 2 tsp. of baking powder
    • ½ cup of vegetable oil
    • 3 large eggs
    • 1 cup granulated sugar
    • 1 cup of plain yogurt or sour cream
    • ½ tsp. of salt
    • ½ tsp. of vanilla
    • 2 tsp. of lemon zest
    • 1 ½ cups of blueberries, can use fresh or frozen

    For the lemon glaze:

    • 2 tablespoons of lemon juice
    • 1 cup of powdered sugar

    DIRECTIONS:

    • Preheat the oven to 350 degrees.
    • Grease all the sides and bottom of a loaf pan
    • Sift together all of the dry ingredients for the loaf.
    • In a large mixing bowl, mix together all of the moist ingredients.
    • Slowly add in the dry ingredients.
    • In another mixing bowl, add the tablespoon of flour to the blueberries and fold gently into the batter.
    • Pour the batter into the load pan.
    • Bake for about 50 minutes until a toothpick in the center comes out clean.
    • Remove the loaf from the oven and let it cool for about 10 to 15 minutes.
    • Remove the loaf from the pan and allow it to cool on a cooling rack.
    • In a small saucepan on low heat, add the powdered sugar and lemon juice, stir and let it dissolve. Simmer for a couple of minutes.
    • Using a toothpick, poke some holes all over the top and sides of the loaf.
    • Brush the syrup all on the top and the sides of the loaf.
    • Let it set for 15 minutes before serving and enjoy!
