Spicy shrimp piled in warm tortillas and topped with your favorite toppings are an easy summertime meal you can quickly put together on a weeknight. If you grill or sautee the shrimp, you don't even have to heat up your kitchen by turning the oven on.

    Ingredients

    Avocado Sauce (avocado crema):

    • 1 ripe avocado
    • 1 clove garlic
    • 1/4 cup sour cream
    • 1/4 cup chopped cilantro
    • juice from 1 lime
    • 1/2 teaspoon kosher salt (or to taste)

    Shrimp Tacos Ingredients:

    • olive oil
    • 2 cloves garlic
    • 1 pound raw shrimp, peeled, deveined, and tails removed
    • 1/2 teaspoon smoked paprika
    • 1/2 teaspoon chili powder
    • 2 cloves garlic
    • juice from 1 lime
    • kosher salt to taste
    • Small taco-sized tortillas (corn or flour)

Toppings (Optional - feel free to customize with your favorites):

    • shredded red cabbage
    • roasted corn
    • chopped cilantro
    • thinly sliced radishes
    • chopped red onion
    • chopped red bell pepper
    • crumbled Cojita cheese or queso fresco

    Directions

    1. Make the avocado sauce, also known as avocado crema, by blending the avocado, sour cream, garlic, cilantro, lime juice, and salt until creamy. Optionally, you can add olive oil for a smoother texture and added flavor.
    2. Set the avocado crema aside and store it in the refrigerator until you are ready to eat.
    3. Toss the shrimp in a large bowl with the smoked paprika, chili powder, and salt.
    4. Add olive oil and minced garlic to a skillet and heat for about one minute on medium.
    5. Add the shrimp to the skillet and cook until pink and no longer soft. (About five minutes.)
    6. Alternatively, you can add the shrimp to a grill pan and grill for a few minutes until shrimp are pink.
    7. Squeeze the juice of the lime over the shrimp.
    8. Warm the tortillas (you can use flour or corn) in the microwave by placing 3 to 4 at a time on a microwave-safe plate and covering them with a damp paper towel. Heat 30 seconds at a time until warmed.
    9. Assemble the tacos with the cooked shrimp, your choice of toppings, and drizzle with the avocado sauce.
