Breakfast Bread Pudding Sometimes I find it’s a struggle to find a variety of choices for breakfast, and I thought why couldn’t breakfast be a casserole that is similar to bread pudding but savory instead of sweet. This Breakfast Bread Pudding recipe is so easy and delicious. You could make it ahead of time and pop it in the oven when you’re ready to eat or it is easy to reheat in the microwave for a fast breakfast. It is very versatile and can be made with a variety of meat, cheese, and veggies. The bread pudding contains everything that I love for a hearty breakfast: eggs, milk, breakfast meat, cheese, and milk. Ingredients:

5 cups of breadcrumbs, cubed. 12 oz of cheese of your choice I used cheddar cheese.

12 oz of ham diced or thin strips (I used about 1/2 lb. sausage, again it is your choice, just as tasty)

    5 eggs

2 cups half and half, or milk

    3/4 cup sour cream

    1 tsp Thyme

    1 tsp onion powder

    1 tsp. salt

    1 tsp ground black pepper

    3 tbsp. butter melted.

    4 tbsp parsley

Heat the oven to 425* and spray a 9x13” baking dish. •

    • Cut the bread into chunks and spread it in the baking dish, pour melted butter over the top.
    • Stir milk or half-and-half together with the sour cream until smooth and pour over the bread.
    • Crack the eggs into a bowl and whisk. Add the thyme, onion powder, salt and pepper, blend together with the eggs
    • Add the meats and vegetables to the bread mixture first then pour the eggs over the mixture.
    • Spread the cheese over the top of the casserole and sprinkle the parsley over the cheese.
    • Bake at 425* for 45 minutes.

Let the Bread Pudding sit for about 10 minutes. Enjoy!!!
