    Ingredients:

    · 2 cups pumpkin puree

    · 3 eggs lightly beaten.

    · 1 cup sifted flour

    · 2/3 cup sugar

    · 1 tsp. Vanilla

    · 1 tsp. Nutmeg

    · 1/4 tsp salt

    Directions:

    1. In a bowl combine 2 cups of pumpkin puree, 3 eggs slightly beaten, and 1 cup of sifted flour.

    2. Add the sugar, vanilla, nutmeg, and salt to the pumpkin mixture and stir until mixed well.

    3. In a heavy-duty skillet heat ¼ inch butter over moderately high heat until it is very hot but not smoking.

    4. Drop the pumpkin mixture by tablespoons in the butter and cook the fritters until they are browned on both sides.

    5. Remove the fritters with a slotted spoon, drain on a paper towel, and dust generously with sifted confectioner’s sugar.
