    Broccoli & Cheese Soup

    For broccoli fans, this cheesy soup is the ultimate comfort food. Serve by the fire with a good loaf of bread or alongside a sandwich for lunch or dinner.

    Ingredients

    • 10 to 16 ounces fresh or frozen broccoli florets
    • 3 cups chicken or vegetable broth
    • 3 cups milk
    • 2 Tablespoons flour
    • 16 ounces grated cheese
    • Salt & pepper to taste

    Directions

    1. Add broth to a medium stockpot and bring to a simmer.
    2. Add broccoli and cook until tender. This will be about 10 minutes for frozen broccoli (according to package directions) or up to 20 minutes for fresh broccoli. Do not drain.
    3. Mix the flour with a little of the milk and blend well. Add to the pot and stir in the remaining milk.
    4. Stir in the cheese and continue cooking over medium-low heat until it melts, stirring frequently.
    5. Season with salt and pepper.

    Serves 6.
