    Louisiana-Style Smothered Okra

    Okra is healthy and delicious.

    Okra is a versatile vegetable, but some may not know how to cook it. Often fried or used as a thickener in gumbo, it is surprisingly good grilled whole and delicious when cut up and smothered.

    Shrimp and sausage are added to this recipe, but neither are needed.

    Ingredients

    • 4 cups sliced okra
    • one small onion, sliced thin or chopped
    • 2 cloves garlic, minced
    • 2 Tablespoons oil
    • 1/2 lb. smoked sausage, sliced
    • 1/2 lb. cleaned, deveined shrimp
    • About 1 cup vegetable broth or water
    • 1 tomato, seeded and chopped
    • salt & pepper, to taste

    Directions

    1. Brown sausage in oil.
    2. Add sliced onion and minced garlic. Cook until wilted.
    3. Add in okra and stir well.
    4. Cook stirring occasionally over medium-low heat for about 30 minutes, adding a little vegetable broth or water to the pot to prevent sticking.
    5. Add in tomato. (This should cut any remaining slime).
    6. Add shrimp and seasonings and cook until shrimp are pink and there is no more slime.

    Must be a regional thing LoL I'm originally from Vermont..we have a place here in the Midwest that sells Fried Okra and it's not bad.. might have to experiment with that as my best friend is from Texas and he goes crazy over it..he even grows it in his Yard plus other veggies too.. although not a fan of it but I'm open to this.. love my Greens 😊
