    Lentil Soup

    Experience the simplicity and nourishment of this delightful lentil soup, which can be effortlessly prepared within 45 minutes to an hour. Not only is it a time-efficient option, but it also proves to be cost-effective and a satisfying meal.

    Ingredients:

    • 8 cups of vegetable broth
    • 2 cups of dried lentils (brown lentils are recommended, although any other variety can be used)
    • 1 teaspoon of garlic powder
    • 1 tablespoon of onion powder
    • 2 1/2 teaspoons of smoked paprika
    • Seasoning salt, to taste
    • Freshly ground black pepper, to taste

    Instructions:

    Begin by combining all the ingredients in a large soup pot, then stir. Bring the mixture to a gentle boil.

    To maintain a soft, rolling boil, slightly reduce the heat. If necessary, feel free to add additional vegetable stock or water to achieve the desired consistency. Personally, I prefer less liquid in this soup recipe, so I do not add any more liquids at this point.

    Allow the soup to cook for approximately 45 minutes to an hour, or until the lentils have reached a delightful softness. To ensure the perfect balance of flavors, do a quick taste test and adjust the seasoning accordingly.

    Serve and enjoy! A kale salad makes a great side dish to complement this delicious lentil soup.
