    Southern Potato Salad

    This potato salad gets its bite from a bit of horseradish and several seasoning seeds. It goes well with a sandwich, fried chicken, or barbecued meats.

    Ingredients

    • 6 large potatoes (peeled or not, quartered and boiled until tender)
    • 6 eggs (boiled, peeled, and chopped)
    • 1/2 cup chopped green onions
    • 1/2 cup finely chopped celery (with leaves, if available)
    • 1/2 cup sweet or dill pickle relish
    • 1 tablespoon horseradish
    • 2 tablespoons yellow mustard seed
    • 1 teaspoon celery seed
    • 1 teaspoon dill seed
    • 1/2 cup mayonnaise
    • Salt and pepper, to taste

    Directions

    1. In a large bowl, combine mustard, celery, and dill seeds with green onions and celery.
    2. Cover with drained potatoes and chopped eggs.
    3. Add horseradish, mayonnaise, and relish.
    4. Mix well, mashing ingredients together to the desired consistency.

    Good served hot or chilled.
