    Get Your Salsa and Margaritas on for Cinco de Mayo

    Make your own salsa and Margaritas to celebrate Cinco de Mayo.

    If a crowded bar or packed restaurant is not your idea of celebrating Cinco de Mayo, why not make your own salsa and serve it with chips and a batch of homemade Margaritas.

    Here are a few easy recipes for both.

    Red Tomato Salsa

    Ingredients

    • 4 Roma tomatoes, seeded and chopped
    • 1/2 medium onion, roughly diced
    • 2 cloves garlic, peeled and chopped
    • 2 jalapeno peppers, seeded (or not, if you like heat) and diced
    • 1/2 cup cilantro
    • Pinch of sugar
    • Pinch of salt
    • Pinch of cumin

    Directions

    1. Put all ingredients in a food processor or blender and pulse to desired consistency.
    2. Pour salsa in covered bowl, and chill at least one hour to overnight.
    3. Serve with tortilla chips.

    Green Salsa (Salsa Verde)

    Ingredients

    • 1 pound tomatillos, husks removed
    • 1 small onion, quartered
    • 2 jalapeno peppers, seeded and roughly chopped
    • 2 cloves garlic
    • 1/2 cup cilantro
    • Zest and juice of 1 lime
    • Salt to taste

    Directions

    1. Place tomatillos, onion, jalapeno, and garlic under a broiler or on an open flame to char.
    2. Place everything in a blender or food processor and puree.
    3. Serve warm or chilled.

    Peach Salsa

    Ingredients

    • 2 medium tomatoes, diced
    • 1 small bell pepper, seeded and diced
    • 2 jalapenos peppers, seeded and diced
    • 1 small onion, diced
    • 3 to 4 fresh peaches, peeled, pitted, and coarsely diced
    • 1/2 cup cilantro, chopped
    • Juice of 1 lime
    • Salt, to taste
    • Freshly ground black pepper, to taste

    Directions

    1. Put tomatoes, bell pepper, jalapenos, onion, and peaches in a bowl.
    2. Season with lime, salt, and black pepper.
    3. Gently fold until well-mixed.
    4. Serve with scoop tortilla chips.

    Frozen Top-Shelf Margaritas

    To really get in the mood for a celebration, go on and buy the good tequila.

    Ingredients

    • Ice cubes
    • 1 can frozen lime juice (6 ounces)
    • 2/3 can top-shelf tequila
    • 1/3 can Triple Sec, Cointreau, or other orange-flavored liqueur
    • 2/3 can water

    Directions

    1. Fill a blender 3/4 full with ice cubes.
    2. Add all ingredients and blend until slushed.
    3. Serve in Margarita glasses, with or without salt around the rims.
    4. Makes 4 servings.
