    WHAT IS PANZANELLA SALAD?

    Panzanella salad is a delicious and refreshing salad that originates from Italy. It is made with simple yet delightful ingredients such as ripe juicy tomatoes, crunchy cucumbers, sliced onions, fragrant basil leaves, and of course, chunks of day-old bread which soak up the flavors of the veggies and the dressing.

    The dish is typically dressed with an olive oil and vinegar dressing that enhances the flavors of the dish. This salad is perfect for a light lunch, a satisfying dinner, or as a side dish to accompany any meal.

    PANZANELLA SALAD WITH RIPE PEACHES AND FRESH TOMATOES

    The juicy peaches are perfectly complemented by the tangy tomatoes and make for a great side dish or a light lunch option.

    To make this salad, simply chop up some ripe peaches and juicy tomatoes, toss them together in a bowl, and drizzle with homemade vinaigrette. We added fresh basil, a little bit of jalapeno for spice and small mozzarella cheese balls for extra flavor.

    Each bite has a hint of spice from the jalapenos. We used very little but just enough. The salad is a bright complement for grilled chicken, shrimp or salmon.

    INGREDIENTS FOR THIS RECIPE

    Bread Salad

    • 2 cups diced peaches
    • 2 cups sliced mixed cherry tomatoes
    • 2 slices of toasted sourdough bread – cubed
    • 1 cup small pearl mozzarella cheese balls
    • 1 tablespoon thinly sliced basil
    • 1 tablespoon jalapeno pepper chopped
    • 1 scallion sliced

    HOW TO MAKE PEACH AND TOMATO SALAD

    Cut, chop and slice all your ingredients.

    Lightly toast the sourdough bread and cut into cubes.

    Combine all salad ingredients into a large bowl.

    Add the dressing and mix well.

    Transfer into a serving bowl.
