    BOYNTON BEACH, Fla. - Fans of creative breakfast and brunch fare have been hotly anticipating the arrival of Yolk in Boynton Beach. The restaurant revealed that it is now slated to open its doors on May 20 after some "unforeseen" delays.

    The nationwide chain known for "pushing the envelope with new and creative brunch dishes" is bringing its signature cheery, contemporary atmosphere to a 2,900-square-foot space at 9884 S. Jog Road.

    When it debuts, the eatery will become Yolk's 18th location, covering South Florida, Illinois, Indiana, and Texas.

    What is the cause of the delays?

    "I'm sorry, but due to unforeseen contrition delays, we should be opening in the next couple (of) weeks. Please stay tuned to social media for the official announcement," franchise owner Gianluca P. told an impatient potential customer on Yelp.

    In addition to Palm Beach County outposts in Boca Raton and West Palm Beach, the Boynton Beach cafe will offer seating for 90 inside and 72 more on a patio outfitted with Yolk's bright yellow umbrellas.

    The chain has acquired a loyal following for its gourmet five-egg rolled omelets, indulgent breakfast mac & cheese, brioche french toast creations, and variations on eggs benedict.

    What else is on the menu?

    It also serves up heartier fare like burgers and sandwiches alongside signature scramblers, pancakes, crepes, and customizable options.

    Yolk takes pride in creating "foodie-forward" dishes through an innovative test kitchen program. Highlights include whimsical items like the Santa Fe Frittata stuffed with chicken chorizo, pepper jack cheese, and pico de gallo.

    Coffee drinks, craft beers, wines, and cocktails, accompanied by decadent egg-centric creations, round out the menu, which is available on the website.

    While the delay has undoubtedly disappointed some customers, Yolk appears poised to quickly find an audience among Boynton's food lovers.
