    Beef Taquitos

    Ingredients:

    • 1 tablespoon of canola oil
    • 1 pound of lean, ground beef
    • 2 to 4 green onions, chopped
    • 1 teaspoon of minced garlic
    • 1 1/2 tablespoons of chili powder
    • 1 teaspoon of smoked paprika
    • 1/2 teaspoon of red pepper flakes
    • 1/4 teaspoon of ground cayenne pepper
    • 1/4 teaspoon of seasoning salt
    • 1/2 teaspoon of freshly ground black pepper
    • 1 cup of nacho cheese sauce
    • 1/2 cup of sour cream
    • 12 (6-inch) corn tortillas
    • 1 tablespoon of canola oil for frying

    Instructions:

    In a skillet, cook the ground beef, green onions, and garlic over medium-high heat until the beef is no longer pink. Add the spices and mix well.

    Heat the corn tortillas in a skillet until pliable, then fill the center of the tortillas with the meat mixture and roll tightly.

    Next, add 1 tablespoon of canola oil to a skillet. Allow the oil to get hot, then place the taquitos seam side down in the hot oil. Fry the taquitos until they're crunchy for about 4 to 6 minutes. Making sure to roll them around in the hot oil to brown all sides.

    Once cooked, plate them and spread nacho cheese and sour cream over them, or serve the condiments in bowls to the side.
