    News of public record: Guernsey County restaurant inspections

    The following are restaurant inspections with critical violations, as conducted by the Guernsey County Health Department from May 27 to June 7.

    Marathon, 2180 E. Wheeling Ave., Cambridge. The person in charge (PIC) is unable to demonstrate knowledge of cleaning and sanitizing. The handwashing sink upfront is being used to wash dishes. Equipment is not being sanitized in a three-compartment sink. The single-compartment sink upfront is being used to wash dishes, but they are not being sanitized

    Trail Family Diner, 320 Dewey Ave., Cambridge. Raw bacon was observed stored directly above ready-to-eat salad dressings and condiments.

    Wendy's, 2180 E. Wheeling Ave., Cambridge. Beverages were observed sitting in standing water at the bottom of the prep unit. Quat concentrations in sanitizing buckets registered 50 parts per million (PPM). Quat concentrations are required to be at least 200 ppm to ensure food contact surfaces are sanitized properly. Time and temperature controlled for safety (TCS) foods not being cold held at the proper temperature. Shredded cheese registered 56 F. TCS food must be held at 41 F or below to prevent the growth of harmful organisms. Flies were observed throughout the kitchen area.

    June 7

    Sally's Short Cut Store, LLC, 71990 Old 21 Road, Kimbolton. TCS foods in a hot holding unit including pizza and cheeseburgers were observed with internal temperatures of 127 F and 125 F respectively. Refrigerated pizza slices, sliced deli meats, and sloppy joe mix were either not date marked or incorrectly date marked. Sliced cheeses were observed in the deli case with date marks of May 20 and 21.
