    With the dog days of summer ahead, our grills usually get a lot of use. Not only does it add a bit of flavor to our favorite foods, but it’s a great way to help keep the house cool during the warmest months of the year.

    While most foods can be prepared outdoors, some are more challenging. Fish, especially the varieties without fatty oils to help prevent them from sticking, is one such food. Fortunately, a simple trick can keep your fillets from falling apart.

    Even if you’re a grill master extraordinaire, cooking fish may have posed a challenge for you at one time. This delicate meat can seem to disintegrate in a flash, and when it does, it can ruin dinner. Short of having a flat top or a stone, you may have given up on it altogether.     Simple Non-stick Hack for Grilling Fish

    They tell us that the easiest way to keep our fish from sticking to the grill is to place a bed of sliced lemons on top of the grates. Then, we put our fillet over the lemons and allow it to cook. When it’s ready to be removed, it comes up without a piece left behind. As a bonus, those lemon slices can add a bright pop of flavor and garnish the plate. This terrific technique could also be done with oranges or limes, depending on the seasoning and flavors you’re going for.

    The Best Fish for Grilling

    According to the Alaskan Salmon Council, the best fish for the grill are:

    1. Salmon . This firm meat, with its natural oils, prevents it from drying out when cooking.

    2. Tuna. These meaty steaks are easy to flip and are also suitable for placing those professional-looking grill marks.

    3. Swordfish. Its mild and slightly sweet flavor, along with its meatiness, helps it to hold up well under high temperatures. Its natural oils also allow it to retain moisture.

    4. Mahi Mahi. This delicate fish, they tell us, holds up surprisingly well on the grill, and this cooking method enhances its flavor.

    5. Snapper. This fish can be cooked whole or as fillets. Much like the Mahi-Mahi, its natural flavors are brought out by the grilling process and heat.

    This terrific advice will help ensure a flawless grilling season. It may even give you more reason to take a few days off and go fishing.
