    Spicing up your weekly dinner menu is simple thanks to this Mexican Salad with Corn Tortilla Chips recipe! Tortilla chips, seasoned ground beef, pico de gallo and other fresh ingredients come together in this all-in-one hearty salad. Each bite offers a taste of zesty and pungent flavors that will make you go back for seconds. Jalapeño adds a fiery kick to our chili- and cumin-kissed beef, but you can adjust if you prefer less heat. This dish is ready in 30 minutes and is sure to satisfy your savory cravings.

    Want to make Cheesy Beef Nachos? To do: Omit the lettuce. Make the salsa and cook beef according to the recipe directions. Line a baking sheet with foil. Add the chips before topping with 1 cup shredded cheddar. Broil until the cheese is bubbly, 1 to 2 minutes. Divide among plates; top each with ¾ cup meat mixture, ½ cup salsa and 2 Tbs. guacamole. Serve and enjoy!

    Ingredients

    • 2 medium tomatoes, diced
    • 1/4 cup finely chopped white onion
    • 1 jalapeño, finely chopped
    • 1 Tbs. chopped fresh cilantro
    • 1 Tbs. lime juice
    • 1/8 tsp. + 1/4 tsp. salt
    • 1 lb. 90% lean ground beef
    • 4 tsp. chili powder
    • 1/2 tsp. ground cumin
    • 1/4 tsp. pepper
    • 4 cups corn tortillas chips
    • 8 cups torn romaine lettuce, 10 oz.
    • 1/2 cup guacamole
    • Cilantro leaves (optional)

    Instructions

    • In medium bowl, stir together tomatoes, onion, jalapeño, chopped cilantro, lime juice and 1/8 tsp. salt; reserve.

    • Coat large nonstick skillet with cooking spray; heat over medium-high heat. Add beef; cook, stirring occasionally and breaking up meat with spoon, until no longer pink, 7–8 min. Drain; return to skillet. Sprinkle with chili powder, cumin, pepper and 1/4 tsp. salt. Cook, stirring often, until flavors blend and beef is browned, 1 min.

    • Arrange chips around edge of each of 4 plates. Divide lettuce among plates. Top with meat mixture, reserved tomato mixture and guacamole. If desired, garnish with fresh cilantro leaves.
