    Ashe County health inspections

    The following information was provided by Appalachian Health Care. Restaurants and food stands are inspected one to four times per year, based on risk frequency, and institutional food service facilities are inspected four times per year.

    Blackjacks Pub and Grill

    18 North Jefferson Avenue, West Jefferson

    Grade: A

    Score: 95.5

    The restaurant received a 1.5-point demerit for improper date marking. Tuna salad, slaw, deli corned beef, all present in refrigeration present past seven day allowed date limit. All items that exceeded date limit were voluntarily discarded by the Person In Charge (PIC) during the inspection. Lettuce, hummus, and ranch dressing present with no date mark. PIC stated that all items were prepared within three days, and date marked accordingly. Corrected Ready to eat TCS foods prepared/opened and held for more than 24 hours shall be date marked to indicate when the food shall be consumed, sold, or discarded not to exceed seven days. The day of preparation/opening shall count as day one. The restaurant received a 1-point demerit for contamination prevented during food preparation, storage and display. Cutting board is heavily scored and no longer cleanable. Do not place food directly on the cutting board. Use sheets of paper. One box of tomatoes was present in a box on the floor at the waitress station. A container of peppers and onions was present in the reach in freezer, uncovered, exposed to ice from leaking evaporator condensation. Peppers and onions were voluntarily discarded by the PIC during the inspection. Boxes containing syrup for soda were stored directly on the floor. Prevent food from becoming contaminated by storing it at least six inches off the floor, covered, and away from contamination sources. The restaurant received a 1-point demerit for physical facilities needing to be better cleaned/maintained. Downstairs dry storage room has buildup on flooring, especially underneath shelving. Miscellaneous items are stacked on top of furniture and on floor. Remove spider webs in hall where soda boxes are stored. Remove broken furniture and empty bottles to better facilitate cleaning. More frequent and thorough cleaning needed of floors, walls, and ceilings. Ceiling tile over mechanical dishwasher not correctly placed. Facilities shall me maintained clean. The restaurant received a half-point demerit for equipment, food and non-food contact surfaces needing to be better cleaned/maintained. Ice buildup observed in freezers. Replace missing knobs on flat-top grill and stove. Replace front covers of fryers. Address areas of rust in bottom of condiment cooler, shelves in walk-in and reach-in, and cart outside of walk-in. Cutting boards have deep grooves and need to be replaced. Equipment should be maintained in good repair. The restaurant received a half-point demerit for non-food contact surfaces needing to be better cleaned. Water accumulating in reach in cooler under prep cooler, should be removed and cleaned. More frequent cleaning is needed of commercial hood and freezers. Equipment should be maintained clean. Remove sticker residue from all food containers stored as clean. Gaskets present with food crumbs and residue should be cleaned.

    Margate Kitchen

    540 Waugh Street, Jefferson

    Grade: A

    Score: 95.5

    The kitchen received a 1.5-point demerit for improper cooling time and temperatures. Brown gravy, present in hot holding cabinet, registered 84 degrees and was voluntarily discarded by the PIC during the inspection. TCS foods must remain at least 135 degrees while being held hot. The kitchen received a half-point demerit for improper eating, tasting, drinking or tobacco use. Uncovered employee drink was present on clean dish shelving over clean cups. Another personal drink, although covered, was placed on a prep table next to single service items and cloth napkins. Keep personal food and drinks away from food and food prep areas. Keep a designated area for food and drinks. Drinks were removed from food and dish storage and prep areas. The kitchen received a half-point demerit for improper cooling methods used. Grits, oatmeal, and other foods were placed into deep, densely packed, and lidded containers while still in the cooling process. More airflow is needed around foods in the cooling process for more aggressive cooling to occur and parameters be met. Other methods or combinations of methods should be used while cooling TCS foods, such as removing lids, placing in shallow pans, use of ice baths or ice paddles, and or placement into blast chilling units or freezers. Corrected by education and discarding food. The kitchen received a half-point demerit for utensils, equipment and linens improperly stored, dried and handled. Drawers where clean utensils are stored are in need of cleaning to remove food crumbs and residues. Cleaned utensils were air drying on the dirty drain board of the three-compartment sink, present with dried food residues and water. The kitchen received a half-point demerit for equipment, food and non-food contact surfaces needing to be better cleaned/maintained. Peeling, rusting shelving present in walk-in refrigerator and reach-in cooler. Cabinetry at serving line has damage on interior and exterior surfaces, and is no longer easy to clean. Hot holding unit gaskets are damaged. Strainer, hanging at three-comp sink, is in poor condition. The kitchen received a half-point demerit for non-food contact surfaces needing to be better cleaned. Buildup of food residue and microbial growth present on shelving and wall in walk-in cooler. Sheet pans and interior surfaces of hot holding cabinets present with dried food remnants and residues. Shelving under prep tables present with spills and residue. Non-food contact surfaces shall be maintained clean. The kitchen received a half-point demerit for physical facilities needing to be better cleaned/maintained.

    Margate Kitchen received scores of 96 and 98 on two previous inspections.

    Peoples Drug Store/Louise’s Sweet T Café

    423 East Second Street, West Jefferson

    Grade: A

    Score: 97

    The cafe received a 1.5-point demerit for improper date marking. Turkey, ham, bologna, liver mush, deli turkey meat, and salad were present in refrigeration with no date marking. Ready to eat TCS foods prepared/opened and held for more than 24 hours shall be date marked to indicate when the food shall be consumed, sold, or discarded not to exceed seven days. The day of preparation/opening shall count as day one. Kitchen staff stated the food was prepared in last 24 hours, but may be in establishment for a longer period of time. Food date-marked during inspection. The cafe received a half-point demerit for unapproved thawing methods used. Raw hamburger in ROP packaging was thawing in prep sink at ambient air temperature. Thawing must take place in cold, running water, under refrigeration, or as part of the cooking process. The cafe received a half-point demerit for personal cleanliness. Food employees must wear effective hair restraints when working with food. Noted employees working in kitchen were not wearing effective hair restraints. The cafe received a half-point demerit for equipment, food and non-food contact surfaces needing to be better cleaned and maintained. Gasket is split on upright one-door freezer. Electrical issue in upright freezer prevents light from working properly per PIC. Recommend defrosting ice cream serving cooler where ice buildup was noted in interior. Multi-use food contact surfaces shall be smooth; free of breaks, open seams, cracks, chips, inclusions, pits, and similar imperfections. Noted on lid for BBQ in one door cooler, a hole where lid had melted. Corrected by instructing PIC to discard lid and replace it. PIC reported that new containers are to be ordered.
