And it tastes even better! This recipe uses freshly baked cookies (bonus points for coming straight from the oven). They’re paired with your favorite store-bought ice cream flavor to create a delicious and infinitely customizable dessert. The beauty of this recipe is its simplicity. My favorite part about making this ice cream sandwiches recipe is getting creative with the cookie dough. And to prevent a melty mess, flash-freeze your cookies for about 15 minutes before assembling the ice cream sandwiches. This hardens the cookies so the sandwiches hold their shape. 2 cups all-purpose flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
3/4 cup butter, at room temp.
2/3 cup sugar
1 egg
1 tsp. vanilla extract
1/2 cup mini chocolate chips
4 cups strawberry ice cream, softened slightly
Instructions
• Heat oven to 350°F. Line rimmed baking sheets with parchment paper. Mix flour, baking powder, baking soda and salt. On medium speed, beat butter and sugar until fluffy; beat in egg and vanilla. On low, beat in flour mixture, then chocolate chips. Divide into 16 rounds. Place 2” apart on baking sheets. Bake until golden, about 10 min. Let cool 5 min. Transfer to rack; let cool.
• Line rimmed baking sheet with parchment paper. Scoop 1/2 cup ice cream over flat side of each of 8 cookies. Press on remaining cookies. Transfer to baking sheet. Freeze.
