Meal prep is an excellent way for anyone trying to eat healthy to stay on track. Not only does it make it easier to know exactly what we are consuming, but it also helps to prevent us from derailing at the drive-thru. While many breakfast sandwich preps are often geared toward children, this is for grown-ups with protein goals. But that isn’t to say the kids won’t love them, too!

This is a brilliant idea! Madeline (@ mad_about_food ) isn’t just making an egg sandwich; she’s making enough to last a week or two. The addition of cottage cheese increases the protein content while making the eggs soft, fluffy, and easy to prepare. Even better, these meal prep sandwiches can stay in the fridge for up to five days or in the freezer for a few months. This means they’re perfect to put together when you have the time; that way, you have them to eat when you don’t. It’s a great way to stay the course with healthy eating and avoid the junk we sometimes grab in a pinch.
Even though I’m not a fan of cottage cheese , I think I can handle it blended with eggs. Just seeing how easy it is to prepare them in the oven and the soft pillow texture of the finished product intrigues me. After the eggs are baked and set, she slices them into squares, which look so perfectly professional on top of the English muffin. During assembly, she also adds a precooked sausage patty and a slice of cheese before heating them briefly in the oven so that the cheese helps hold everything together. That’s clever! Then, they are wrapped in foil and placed into a freezer bag for extra protection. When ready to eat, remove the foil and pop them into the microwave.
This recipe has so many potential variations that we will never get bored. Instead of English muffins, we could try bagels or even croissants. Rather than breakfast sausage , we can try bacon , ham, steak, or even chicken. The addition of veggies might also add an extra layer of flavor and provide more nutrients. And if the cottage cheese gives this recipe too much tang, I’m curious to know if using ricotta in its place would yield a similar result.
