Carleigh, who wrote a book on zero-waste cooking, says you can combine the strawberry tops, water, and sugar in a pot and bring it to a boil. Then, reduce the heat and simmer the mixture on low for about 15 minutes.
Once it's thickened, drain the liquid and use the remaining portions of the tops as compost. Now, you have strawberry syrup that pairs perfectly with yogurt, oatmeal, or some homemade ice cream.
You can also use those tops for strawberry-infused water or tea. All you have to do is add the washed tops to a jug of water or brew them in hot water for a light, fruity flavor.
Soak the strawberry tops in vinegar to create a flavored vinegar for dressings and marinades. This would be perfect for a light steak marinade this grilling season!
Of course, you can also just blend the tops into smoothies for added nutrients, or incorporate finely chopped tops into baked goods like muffins or scones. Yes, you can eat the leaves!
