Just toss in a boneless pork butt, barbecue sauce and spices, and let your slow cooker work its magic. A relatively tough and fatty cut, pork butt benefits from low and slow cooking. A few hours later, you’ll have tender, juicy pulled pork that practically falls apart at the touch.     • 1 onion, chopped
    • 3 lbs. boneless pork butt
    • 1 Tbs. chili powder
    • ½ cup ketchup
    • ¼ cup packed dark brown sugar
    • ¼ cup cornstarch
    • 2 Tbs. white vinegar
    • 2 cloves garlic, minced
    • ¼ tsp. salt
    • 6 whole-wheat buns, split

    Instructions

    • Place onion in bottom of 3-qt. slow cooker. Top with pork; sprinkle with chili powder. In small bowl, whisk together ketchup, brown sugar, cornstarch, vinegar, garlic and salt until smooth. Pour over pork. Cover; cook on low until tender, 12 hrs.

    • Transfer pork to plate, reserving liquid in slow cooker; skim off excess fat. Using 2 forks, shred pork. Stir back into cooking liquid in slow cooker. Dividing evenly, fill buns with pork mixture. Transfer to serving platter. Garnish as desired.
