    This One-Pan Corn Dish From Molly Yeh Is ‘Sweet, It’s Creamy & the Uncontested Queen of the Cheese Pulls’

    If you’re looking for a new and interesting side dish to serve up at dinner time, Molly Yeh has just the thing. Her cheesy corn side dish is the perfect pairing for Korean BBQ, but it will also go well with your American BBQ, hamburgers and hotdogs, chicken wings — and basically anything! Made with delicious sweet corn and ooey-gooey mozzarella, this dish is going to be the one that’s asked for over and over again by everyone in your family as soon as they give it a try.

    “For an easy, cheesy dinner side, I’m making Corn Cheese,” Yeh said in a clip from her Food Network show, Girl Meets Farm. “It’s sweet and creamy, and the uncontested queen of the cheese pulls.”

    One of the best things about Corn Cheese is that it comes together in a single skillet. Start by melting a pat of butter in a cast iron pan and adding chopped red bell pepper and a pinch of salt. When the pepper begins to soften, add in diced scallions and your corn kernels (fresh off the cob is best, but you can also use canned corn, as is traditional!).

    While the corn, peppers, and scallions are cooking, you can add a couple of teaspoons of sugar to really enhance the sweet corn flavor as well as a big pinch of gochugaru, a smoky, sweet, and spicy Korean pepper powder. And then, fold some creaminess with a big helping of mayonnaise.

    Finally, sprinkle low-moisture mozzarella cheese over the corn mixture and toss the entire skillet under the broiler for about two minutes until the cheese has completely melted. Then it’s time to eat!

    “That looks good!” one person commented on the Food Network clip. “Have to try that the next time I grill.” Another person added, “Wtf amazing.”
