    Working in McDonald's corporate kitchen is a vastly different experience from working in one of their guest-facing fast food restaurant locations. Now, one of the fast-food giant's former chefs (who conducted sensory and quality testing for the brand) has revealed his top picks for the best dining experience—and what he avoids.

    Mike Haracz, former manager of Culinary Innovation, is careful to say his choices are about personal preference and have nothing to do with food safety. Still, he avoids the folded egg used on breakfast sandwiches and favors a round egg or the scrambled option.

    He also says the new burger bun is better steamed after they made the bun change.

    He also adds that timing might be the most significant factor in the flavor experience of grabbing a bite to eat at McDonald's. The U.S. has switched to cooking fresh beef, which means it needs to be eaten relatively shortly after being prepared to taste the impact of that significant change.

    Haracz notes that a restaurant being adequately staffed can be a major factor in how an order turns out because food quality suffers at understaffed locations with overworked employees.

    If you’re going to order a McRib, you should do it right at the beginning of the promotion, when they are in highest demand, according to former employees. When McRibs are not selling well, they just sit in their sauce pot, possibly for hours on end.

    According to multiple accounts from former employees, many restaurants don’t do the best job abiding by their “freshness” timers.

    Some McDonald’s locations may even encourage employees to ignore it when a timer goes off so that they don’t have to throw out older items.

    For many restaurants, you can score quicker service if you head for the drive-thru, especially during rush hour.
