    Easy Homemade Watermelon Popsicles: A Refreshing Summer Treat

    These easy popsicles are the perfect summertime treat.

    Watermelon may be available at the grocery store year-round, but it has the best taste and texture when it's in season during the summer. A healthy and refreshing snack, watermelon is full of nutrients and antioxidants, including vitamin A, vitamin C, potassium, and magnesium.

    Watermelon is not only a tasty way to stay hydrated in the summer, but studies have shown watermelon contains the possible cancer-fighting plant compounds, lycopene, and cucurbitacin E.

    There are plenty of watermelon-flavored popsicles in the freezer aisle to choose from. But when you make them yourself, they are free of artificial preservatives and food dyes, and you get to control how much sugar goes into them.

    Equipment Needed

    • Blender
    • Popsicle molds

    Ingredients

    • 4 cups chopped watermelon
    • 2 tablespoons sugar
    • juice of one lime

    Directions

    1. Blend watermelon, sugar, and lime juice in the blender until smooth.
    2. Pour mixture into popsicle molds.
    3. Freeze for about 4 hours or overnight (until set.)

    Tips

    • Running hot water for 30-60 seconds over the popsicle mold will help loosen the popsicle.
    • You can use less or more sugar to taste.
    • The lime juice can be replaced with lemon juice.
    • Try adding a handful of basil leaves or mint leaves to the blender for a summer-fresh flavor.
    • If you don’t have molds, you can use small paper cups and insert wooden sticks once the mixture starts to freeze.
