Can McDonald’s burgers grow mold? A former chef has the answer

A former McDonald’s chef is giving insights on the chain’s beloved burger . Mike Haracz, a former corporate chef for McDonald’s, uses his TikTok account to give a behind the scenes look at the fast food chain's operations.

On a recent video, one person commented saying McDonald’s burgers never mold. Another followed up disagreeing with that statement. Haracz decided to address the subject in a separate video.

He said: “When anyone talks about the McDonald’s burgers never going bad, that is false.”

Many people claim that because of the amount of preservatives in the food, you can leave a McDonald’s meal out for days, and even years, and it will look the same as it did from the start. The company assures customers , however, that there are no preservatives in the meat.

He said in those cases, the food’s longevity is caused by a combination of “mold inhibitors” inserted in the food and a dry environment.

When kept in a moist environment, the burger and bun will mold just like any other food. In instances when a McDonald’s burger does last without molding, it’s caused by the food’s ability to easily dehydrate.

McDonald’s chefs cook the meat to be well done. That means the meat is already drier with less raw protein.

They also salt and season the meat after it’s cooked. Salt can soak up excess moisture as well, making the meat dry.

Moisture is what microbes feed on in order to grow mold. So when the burger is left out in dry conditions, there’s no water that will instigate molding.

“You’re basically making jerky and croutons if you are leaving that burger out in, you know, an open air environment,” he said.

“Add a little water to that dried thing if it’s lasting long and then let it sit in a bag again, and it will start molding.”
