I can think of several cocktails sweet enough to be considered dessert. But this frozen mudslide recipe stands in a league of its own. To make it, vodka, Irish cream and coffee liqueur are blended with ice cream to create a thick, creamy, boozy adult milkshake.

The Mojito Caballito is a little-known riff on the Cuban classic that adds French vermouth to the Mojito’s traditional mix of rum, lime, sugar, mint and soda. According to Jeff “Beachbum” Berry, the drink was first recorded at iconic Havana bar Sloppy Joe’s in the early 1930s. At Lei Low in Houston, owner Russell Thoede interprets “French vermouth” as blanc (instead of dry), and his choice of a sherry-based blanc vermouth binds the whole drink together with its combination of salinity and rancio, citrus and pear notes. Thoede pairs this vermouth with a blended white rum that delivers vanilla, tropical fruit and a touch of funk. Lei Low is so proud of the “Caballito” spec that all calls for Mojitos at the bar are answered with it.
